Station & Store Management
Every station, every shift — Clean · Organized · Restocked. Standards from the 7/6/2026 staff memo.
- CLEAN — Counters wiped down · corners free of grease and crumbs · all surfaces clean · bathroom toilet, sink, floor, and mirror clean.
- ORGANIZED — Staff drinks stored away and always covered · one towel per station in a sanitizer bucket, no loose dirty towels on counters · all like items stored together · box tabs cut off · sinks clean with strainers in place.
- RESTOCKED — All inventory restocked · all prepped items restocked · bathroom soap and towels restocked.
- Gluten-free and Vegan/Dairy-free: label and wrap each item individually. Use silicone labels on all pizza.
- No more Parmesan on any pizza finishing.
- Never cut the tips off squeeze bottles.
- Pepperoni portions: 100 g on a Large pizza, 50 g on a Personal.
- Chicken prep: 70 g per portion, cut into ½-inch pieces.
- Lettuce: follow the new prep guide.
- Fill out the new shift Form before your 30-minute break and again before you leave at the end of your shift.
- Check off every open ticket the moment it is complete. Every pizza delivered within 10 minutes. No KDS "Red" alerts.
- T-shirt system goes inside the box — and label the box.
